A Quick and Easy Supper Recipe for All the Family
I have sampled many pizzas over the years, from the traditional in Southern Italy, to the lovingly homemade, to the end of the night delivery variety. I love pizza. It is my naughty food of choice. However I was keen to make a not-so-naughty pizza which could be enjoyed with my daughter.

It is still fast food, because it is ready in 20 minutes, but with none of the guilt. Enjoy it… we do!
Milano Salami and Courgette Pizza (with Loads of Hidden Veg)
Serves 4 child portions or 2 adults
Prep in 5 minutes, cooks in 15 minutes
Ingredients and suggested quantities:
1 cup of Tomato-tastic sauce
1 x garlic and sun-dried tomato flat bread from Sainos
5 x chestnut mushrooms, cleaned and sliced
6 x slices of Milano salami
1 ball of mozzarella, torn or sliced
½ courgette, grated
Freshly ground black pepper
Drizzle of olive oil
- Pre-heat oven to 220c
- Cover the flat bread with the Tomato-tastic sauce, then layer up with the mushrooms, salami, mozzarella, courgette and black pepper
- Drizzle some olive oil over the top and slide directly onto the middle shelf to cook for 15 minutes. The crust will be golden, the cheese, bubbling and the courgette getting crispy. Serve immediately.
The mushrooms and courgette produce quite a bit of liquid so it is important that the pizza goes straight onto the oven shelf and not to use a baking tray to ensure a crispy bottom.
If you are making one of these, why not make two, cut into quarters and chuck it into the freezer for a really quick supper that is nutritionally superior to the packaged variety and a delicious treat.
