Green Pasta Full of Goodness

A Quick and Easy Supper Recipe for All the Family

This is an amazingly quick and simple pasta supper which provides lots of energy for an active family and a nice nutritional boost. If you wanted to jazz it up a bit, you could top with crispy pancetta, some shredded chicken, grated parmesan or some toasted almond flakes. We quite like to keep it clean and simple though…

Green sauce

Green Pasta
Serves 4
Prep in 10 minutes, cooks in about 15 minutes

Ingredients and suggested quantities:
Slug of olive oil
1 clove of garlic, crushed
1 leek, trimmed and finely sliced
2 courgettes, cubed
2 large handfuls of broccoli, cut into small florets
1 bundle of asparagus, trimmed and chopped
1 handful of petit pois
1 handful of chopped parsley
¾ – 1 pint chicken stock
½ cup of low fat crème fraiche
Salt and pepper to season
Pasta of your choice

1. Brown the leeks and courgettes in the olive oil and garlic on a high heat. When they start to colour, chuck in the broccoli, asparagus and petit pois for a few minutes
2. Stir in the parsley, then add the stock, reduce the heat and allow to simmer for 5 minutes
3. Get your pasta on to cook
4. Blitz the sauce with a hand processor until smooth and return to a low heat. Stir in the crème fraiche and season to taste with a little salt and freshly ground black pepper
5. Tip the cooked pasta into the sauce. Loosen with a little pasta water or a splash of milk if you like
6. Serve immediately with a drizzle of good olive oil over the top

Green pasta

Double the recipe and freeze a batch so that you have something up your sleeve for a last minute tasty supper.
