Tea Time Turkey & Summer Slaw Wraps

A Quick and Easy Supper Recipe for All the Family

As the weather warms up and we are able to spend more time outside in the fresh air, I am always looking for inspiration for simple tea time treats that travel well and can be enjoyed outside on a picnic blanket.

This wrap is effortless, travels well and is really tasty.

Turkey and slaw wraps

 

Tea Time Turkey Wraps
Makes 2 large wraps, serving 2 adults and 1 child, appetite dependent
Prep in 10 minutes

Ingredients and suggested quantities:
2 flour tortilla wraps
2 cups of summer slaw as per the recipe below
Wafer thin hickory smoked turkey
1 cup alfalfa sprouts

1.  Spoon the slaw into the central third of the tortilla.  Top with an appropriate number of turkey slices and then with a handful of alfalfa sprouts
2.  Roll up the tortilla firmly and cut into three pieces.  Wrap in cling film and you are ready to picnic

Summer Slaw
Serves 4
Prep in 15 minutes

¼ red cabbage, thinly sliced
2 carrots, peeled and grated
¼ celeriac, grated
½ apple, grated
1 pear, grated
4 spring onions, finely sliced

Dressing:

1 tsp seed mustard
1 tsp Dijon mustard
2 tbsp white wine vinegar
3 tbsp extra virgin olive oil
2 tbsp mayonnaise
1 tbsp fresh mint, finely chopped
1 tbsp fresh corriander, finely chopped
Salt and pepper to taste

1. Combine all the ingredients for the dressing in a large bowl until smooth.  Add the prepared vegetables and fruits to the bowl and mix together until evenly covered.  Consume within 2 days
