Red Pepper and Mushroom English Muffin Pizzas

‘Mumma, can you make these again some time?’ It was like music to my ears. This is a perfect quick and easy supper for little and big mouths when you are short of time.


English Muffin Pizzas
Serves 2-4 depending on tummy sizes

2 rashers streaky bacon
1/2 red pepper, cut into strips
4 mushrooms, halved and sliced
A few sprigs of rosemary
4 English muffins, split in half
1/2 a can of crush tomatoes
1 heaped tsp of pesto
Chunk of cheddar, grated

Start by frying the bacon rashers in a hot dry pan until crispy. Remove the bacon from the pan, finely cut into thin strips and set aside. Drain off the excess fat from the pan and then chuck the peppers, mushrooms and rosemary in together to soften for about 5 mins.

Then, toast the muffins. Mix together the tomatoes and pesto and spread on each of the muffin halves. Pile the mushrooms and peppers on top of the tomato sauce and then top with the grated cheese. Sprinkle the bacon pieces over the top and then pop until the grill for about 5 mins or until the cheese is bubbling. Eat immediately… Or at least wait for the cheese not to burn any mouths!

Obviously these little beauties work with pretty much any topping, but I do like to take the opportunity to chuck on some unsuspecting veggies and to use about half the amount of cheese that you would find on a regular pizza. Who knew red peppers and mushrooms would become the new favourites of a three year old?!
