Spicy Coconut Pork and Asparagus

Rather surprisingly, we do actually have a very good little curry house in our little mountain town that serves a delicious and authentic butter chicken and ridiculously good naan breads… None of these thick doughy disasters you find in the supermarket. But this time we stayed home. This curry will be lighter on the calories, and on your pocket, than a visit to your local take out.

Spicy Coconut Pork and Asparagus
Served with basmati rice and a handful of fresh spinach
The suggested ingredients below will happily serve 4 for supper.

1 red onion, diced
Drizzle olive oil
500g cooked pork loin, cut into 1cm thick fingers
4 tbsp of a jarred curry paste, we used a tikka paste
1 can of reduced fat coconut milk
1 lg bunch of asparagus, stalks off and halved

Firstly, get the rice on. After years of serving clumps of (unintentionally) sticky rice, I have only recently discovered ‘the trick’ known to so many but me for a long time. 2 cups of water to every cup of rice in a pan. Bring to the boil, then stick the lid on and gently simmer for 30 mins. Remove from the heat, leaving the lid on and let it sit for a further 10 mins… Phew… No more stodge.

Now, drizzle some olive oil into a pan on a medium heat and soften the onion until translucent and starting to colour. Then chuck in the pieces of pork, ours was leftover from a joint the day before, then the curry paste. Let the paste cover the onions and pork and then sizzle for a few minutes to wake up those spices… Get the extractor fan on!

Pour in the can of coconut milk, stir it up, reduce the heat and let simmer for about 10 mins. Add the asparagus to the pot 5 mins before you are ready to serve. This will be long enough to soften them without going soggy.

Serve it with the perfectly cooked rice and a big handful of spinach. Delish.


What curry is complete without a poppadum and some mango chutney? So add those to your shopping list too.

I wasn’t quite ready to give this spicy concoction to my 11 month old (although he did have the rice, pork, asparagus and spinach all chopped up with a splash of the coconut milk) however my three year old, my husband and I thought it was great.
