Today my boyo turns 1 year old!
And what better cake to celebrate than with a beautiful British Victoria Sandwich with a Canadian twist.
I used delicious Magazine’s simple recipe for the sponge and added a classic Canadian PB&J filling… That’s peanut butter and jelly to us Brits.
I covered the top of one sponge with strawberry jam, and the other with a peanut butter frosting.
I made this simply by beating together the following until smooth:
1/2 cup of unsalted butter, softened
1/2 cup of organic crunchy peanut butter
1 and a 1/2 cups of icing sugar
Then simply sandwiched the two together.
Quite naughty, but a really quite delicious. Just a slither of the sponge for the Birthday Boy though!
