Once you have made the pulled pork from the recipe I posted yesterday, found here, there are really so many things you can do with any leftovers… serve with tubes of rigatoni… a big spoon of brown nutty rice… stuffed inside quesadillas or just simply over a big baked sweet potato to name a few.
We opted for the latter…
Spoon a little natural yogurt on top and a few snippets of spring onion for freshness, and you have got yourself a whole new meal.
Not only is this time efficient, but it is also very economical as it makes a relatively small piece of meat stretch over two meals for a family of four. And that makes me happy.
