Homemade Yellow Pepper Humus

When time allows, I will always make my own.  Not only does home cooking allow you to know exactly what ingredients your kiddos are popping their mouths, but this also gives you free rein to jazz up a classic recipe a little.  Chickpeas can carry such a variety of flavours, so making humus is a great way to introduce new flavours and ingredients in a format that is familiar.  Yellow peppers, for example, in this recipe went down a treat.

Yellow Pepper Humus
Makes 1 large cereal bowl full

1 yellow pepper, deseeded, quartered and softened in the microwave for 90 seconds
1 can of chickpeas, drained and rinsed
1 heaped tbsp tahini or sesame butter
1 garlic clove, crushed
1 handful of fresh parsley
1 lemon, juiced
2 tbsp olive oil
1/4 tsp ground coriander
1/4 tsp ground cumin
Salt and pepper

Blitz all of the above together to your preferred consistency and serve with veggie sticks and crackers for the perfect snack or as part of a packed lunch box!
