Quinoa and Peanut Protein Nuggets

These nuggets are an excellent source of protein, fibre and energy and therefore ideal packed lunch box fillers and morning or after school snack time treats.  You can feel guiltless offering these out!  And they are pretty tasty with your cup of tea also.  So take a moment, and put the kettle on.

Quinoa and Peanut Protein Nugget
Makes 30 nuggets

1/2 cup quinoa
100g lightly salted butter, softened
100g fairtrade brown sugar
2 eggs, lightly fork whisked
1/2 cup pure peanut butter (check the label for just the one ingredient!)
1 cup of oats
1/4 cup whole wheat flour
1/4 cup self raising flour (it makes them a little lighter)
1 tsp vanilla extract
30 cacao chips (lots of research available on cacao vs cocoa if you are interested, if not then just try them, they have an almost fruity chocolatey flavour!)

Preheat the oven to 190c or 375f and line two cookie trays with grease proof paper

Tip the quinoa seeds into a dry frying pan and toast on a medium low heat for about 5-8 mins.  Toss them around during this time so that they brown relatively evenly.  Set aside to cool when done.

In a large bowl, cream together the softened butter and sugar.  Using a fork, mix in the eggs thoroughly before adding and mixing in the peanut butter.  It will be a pretty sticky mess at this stage.

Tip in the oats and flours and ensure all is thoroughly combined before adding the toasted quinoa.

Mix it all up quickly and then using two spoons, scoop out little nuggets, just smaller than a golf ball and position them on the cookie trays.

Use the back of a little spoon to gently press down the nugget a little before topping with a single cacao drop.

Bake in the preheated oven for 10 minutes (12 minutes if you are living at mountain altitude… It gets me every time!).  They will have puffed up just a little, be golden around the edges and totally moorish.

Allow to cool for a few minutes before transferring the nuggets onto a wire cooling rack, to cool completely.

Finally, keep out of reach of the kiddos when your back is turned, otherwise they will be gone before the end of the day.  Now, I think that kettle has boiled now, so I’m off to take a ‘mumma moment’ x
