Quick, easy, super tasty and a great way to bring together leftover odds and sods from the fridge. Best of all, your family will DEVOUR them. I mean, what’s not to love about crispy tortillas, melted cheese, punchy flavours and creamy avocado.
And that is pretty much the formula for this simple greatness!
Take a flour tortilla, top with some grated cheese, cheddar, mozzarella, Monterey Jack if you like. Quickly stir fry some veggies, I like to include bell peppers and onions together with whatever else I have in the fridge, with a pinch of cumin and dried chilli.
Spoon a layer of the veggies on top of the cheese. Add some chicken, beef or prawns if you have some to use up. Top with avocado slices, another sprinkling of cheese and then close it up with another flour tortilla. A word of warning, don’t be tempted to over stuff the quesadilla as this makes it a little tricky to handle later on.
Pop the quesadilla into a frying pan on a medium heat. When the cheese is melting out of the sides and the bottom tortilla is crisping up, carefully flip it over. When both sides are golden and crispy, remove the quesadilla from the pan and allow to sit for a few minutes before cutting into quarters.
Serve with with soured cream and a fresh tomato salsa. Chuck some chopped coriander over the top if you have some!
