Spiced Carrot and Banana Loaf

If you are looking for a sweet treat that is super quick and easy to chuck together and pop in the oven, then this is it!  Not only is it pretty tasty, but it travels well and stays moist for a good few days.   Spiced Carrot and Banana Loaf
Serves 8-10

120ml sunflower oil
225g brown sugar
3 eggs
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
3 medium sized carrots, peeled and finely grated
225g self-raising flour
1 1/2 ripe bananas
120ml full fat Greek yogurt

Preheat the oven to 185c or 365f.  Butter and flour an 8.5″ loaf tin.

Mix together the oil and brown sugar in a large mixing bowl.  Whisk in the eggs thoroughly, one by one, then add the spices and grated carrot.  Sift the flour straight into the bowl and combine together quickly with a metal spoon.

Mash the bananas in a separate bowl and stir in the yogurt.  Spoon into the cake batter, and combine it thoroughly.  Pour the whole lot into the loaf tin and bake in the oven for one hour.

After an hour, check the centre is cooked by inserting a cocktail stick and checking it comes out clean.

Allow the loaf to completely cool in the tin, before turning it out.  When cool, top with cream cheese frosting if you fancy making it even more tasty!
