Beef and Noodle Stir Fry

This delicious dish of leftovers does not deserve the derogatory term, however that is what it is.  It took a total of 10 mins to prep and less than 10 mins to cook, so after a busy day it was the perfect quick and easy supper to satisfy hungry tummies.  No faffing, nothing terribly clever, just really tasty. This meal consisted of leftover cubed roast beef, with half a packet of dried noodles from the cupboard and chopped up veggies from the fridge… Halved sugar snaps, strips of red bell peppers, carrot ribbons and bean sprouts.

The flavour hit came from a crushed garlic clove, a good glug of soy sauce, a tablespoon of crunchy peanut butter, a splash of fish sauce and rice wine vinegar.

Simple, quick, delicious and an efficient way of cleaning out the fridge.  And EVERYONE enjoyed it. 

Mental note… Remember to make a stir fry again soon!
