Deadly simple but totally delicious and bound to please even the carnivores!
In a bowl, dress some salad leaves, finely chopped red cabbage and chunks of avo in a light balsamic and olive oil dressing. Sainos do a tasty salad bag with matchsticks of beets and a combo of lambs lettuce and other delicate leaves. The red cabbage adds a great crunch. Add some fresh mint and lemon zest to really bring those leaves to life. Season with salt and pepper and set to the side.
Smudge a spoonful of hummus down the centre of a wholemeal tortilla, and then top with the dressing leaves and avocado.
Pan fry 3 or 4 thick slices of halloumi in a drizzle of olive oil on both side until golden brown.
Pop on top of the salad, fold and roll, and tuck in 👌🏻

Very excited to try this – I’ve got some reluctant avocado eaters here so I’ll be making it for my lunch tomorrow (with avocado sticks for the baby to hopefully get her into avocados from an early age!)

Loved this! The lemon and mint was a great touch. Felt like a real treat for my lunch but was so quick to make.
I’ve got most of the bag of salad left so might make a salad version of this for my lunch tomorrow.
