Loaded Summer Nachos

Flavourful and delicious to nibble at as a snack or a cheeky lunch, these nachos are ideal for play dates in the garden.


Deadly simple… Turn on the grill to it’s highest settling and then in an oven proof dish, layer up the following:

Tortilla chips… Tomato salsa – freshly chopped, tomatoes, chilli, red onion, coriander, garlic, salt… Chunks of avo or spoons of guacamole… Chopped Spring onions… Grated cheddar… Grilled bacon bits… Chopped coriander… Red chilli or jalapeño if your kiddos can handle the heat 😜

Pop under the grill until the cheese is bubbling.

Then do the same again with a second layer of tortillas and toppings and grill ’til bubbling.

Top with a final layer of coriander and spring onions, and then dollops of creme fraiche. 

Devour with napkin!

A little bit naughty, but very very nice 😇

The cheese goes a long way so you don’t need too much. Also, nachos can be pretty salty so check the nutritional info on the packet to make sure you know what you are feeding your kiddos.  Alternatively we sometimes make our own: use scissors to cut flour tortillas into strips. Toss them in a large bowl with a little olive oil, herbs and smoked paprika and then bake at a high heat for about five mins… Just keeping an eye on them so that they don’t go too brown. They will go deliciously crispy!
