Picnic Pasta Salad

We are nailing the school holidays so far with mornings out and about at local parks, forests, zoos, castles and PYO farms and packing a picnic lunch to take with us. 

Fresh air, sunshine and running around in the morning seems to be a perfect formula for a quieter, relaxed afternoon at home… Hurrah.

A favourite picnic last week, when visiting Hever Castle, was a pasta salad, cold chicken drumsticks, followed by a plate of berries.  


All simple enough to chuck together, keep cool in an insulated backpack with chill blocks and then decant onto dishes on a picnic rug. Beats a soggy sandwich, for sure.

To make this Picnic Pasta Salad, combine the following ingredients:

4 cups cold cooked pasta

1 heaped tbsp Mayo 

2 heaped tbsp creme fraiche

1 heaped tbsp red pepper pesto

1/2 cup chopped fresh parsley, basil, coriander, mint, chives

1/2 cup cubed cucumber

1/2 red onion, finely sliced

1 small can of sweet corn 

Freshly ground black pepper

And that’s it. Nothing clever, just ensure the container is properly sealed and chilled until picnic time.  Chuck in some forks and napkins, and everyone can tuck in.

We concluded our lunch with a visit to the ice cream kiosk…
